So, the hardest part of vacuum sealing for the vacuum sealer is the sealing of the bag. The more sealing you do and the faster you do it the more heat that builds up and the hotter the transformer will get. The smaller the transformer the faster it will over heat and shut down. Price is also a factor and to buy a food vacuum sealer with a 400-watt transformer or higher and classed as a commercial vacuum sealer is going to cost you upwards of around $900 and probably be made in Europe somewhere not China. For most house holds spending $900 on a vacuum sealer is just way too expensive. The smaller machines that are classed as professional vacuum sealers or domestic vacuum sealers are very good vacuum sealers and suitable for most jobs. You just need to realize they have their limitations depending on the wattage of the transformer.
Domestic food vacuum sealers
So, let’s look at the Domestic vacuum sealer first. Usually these will be 110 watts up to 250 watts. If the wattage of the vacuum sealer is below 100 watts, I would not recommend it, even for domestic use. These domestic vacuum sealers will have a single seal and single pumps. They will go to a vacuum of 75Kpa – 85Kpa. If you are looking at a cheap vacuum sealer that goes to 50Kpa – 60Kpa or the specifications don’t tell you, then I would steer clear of it. When purchasing your domestic vacuum sealer or any vacuum sealer it is also important to be able to get spare parts for it. In particular the Teflon heat strip and the foam seal. Buying from a department store you will not be able to buy these replacement parts from them and will need to go back to the supplier so make sure you can contact them before purchasing as I can guarantee, you will at least need a new set of foam seals at some stage to keep your vacuum sealer going.
So, as we have stated, it is the sealing that is the hard job and is what will over heat and shut down your vacuum sealer. By using pre-made bags this alone will half the amount of sealing that you need to do and be so much easier on your vacuum sealer and the operator. Most people that over heat vacuum sealers are using rolls. Most home users also use rolls because they think they are cheaper. To be classed as a professional vacuum sealer, it is not classed on the watts of the transformer, it is classed on the functions. So, a professional vacuum sealer can be anywhere from 120 watts up to 400 watts. And yes, the higher the wattage of the professional vacuum sealer the better it is. A professional food vacuum sealer will have double seals and double pumps and go to a vacuum of 80Kpa – 90Kpa. All the same information as the domestic vacuum sealers is relevant to the professional vacuum sealers. So, it is sealing that will over heat them and shut them down. A professional vacuum sealer should do 50 – 100 bags with a cycle being 1 minute. The professional vacuum sealers are great for weekend hunters and fisherman where they are doing quit a bit more than the weekly grocery shopping. The professional class of vacuum sealer is ideal for the busy vacuum sealer with out having to outlay the cost of a commercial vacuum sealer. Same thing applies with availability of parts. Price range of a professional vacuum sealers is from $400 up to $1000.
Commercial food vacuum sealers.
It is all about wattage when it comes to a commercial food vacuum sealer. So, a commercial vacuum sealer should be at minimum around 400 watts and can go as high as 1800 watts. These higher wattage machines will be able to work faster and longer with out over heating. I saying that you will need to keep an eye on the sealing as if they get too hot, they may start melting bags or pre sealing bags and need to cool off to get rid of the residual heat. Most of the good quality machines such as Lava commercial vacuum sealers have a temperature dial that you can alter the time the sealing bar is active. These commercial vacuum sealers that have a temperature dial are also good for thicker Mylar bags as you can turn the heat up to be able to seal them properly.
